Kepiting Asam Manis

Bahan :

 

  1. 3 ekor kepiting atau rajungan segar
  2. 2 buah jeruk nipis, perah airnya
  3. Air untuk merebus secukupnya
  4. Minyak goreng untuk menggoreng kepiting, secukupnya

Bumbu/bahan saus :

  1. 1 sdm minyak sayur
  2. 2 sdm mentega
  3. 10 sdm cabe bubuk
  4. 1 buah bawang bombay, cincang
  5. 3 siung bawang putih, cincang
  6. 2 sdm saus tomat
  7. 5 sdm saus tiram
  8. 2 utas daun seledri, rajang kasar
  9. 1 sdm kecap asin
  10. 1 sdm kecap inggris
  11. 1 sdt lada bubuk
  12. 1 sdt gula pasir
  13. 1/2 sdt garam
  14. 1 gelas air bersih

Cara membuat :

Kepiting :

  1. Bersihkan kepiting, buka tempurungnya,  potong menjadi empat bagian, dan memarkan capitnya.
  2. Untuk menghilangkan bau amis, baluri seluruh kepiting yang sudah dibersihkan dan dipotong tadi dengan air perasan jeruk nipis, diamkan selama 15 menit.
  3. Rebus kepiting dengan air secukupnya sampai mendidih, tambahkan arang untuk menghilangkan racunnya. Angkat, tiriskan.
  4. Panaskan minyak goreng, dan masukkan kepiting hingga berubah warna atau matang dengan menggunakan api kompor sedang. Angkat, tiriskan.

Saus :

  1. Panaskan minyak goreng, tambahkan mentega
  2. Tambahkan bawang putih dan bawang bombay, tumis hingga layu dan mengeluarkan aroma harum.
  3. Tambahkan garam, kecap manis, kecap inggris, saus tiram, lada bubuk, gula, cabe bubuk, dan segelas air. Tumis sebentar hingga mendidih dan mengental. Angkat.
  4. Masukkan kepiting yang sudah digoreng. Aduk hingga rata.
  5. Kecilkan api, masak terus sampai bumbu meresap.
  6. Sajikan dengan ditambahkan taburan daun seledri dan bahan pelengkap lainnya.
